How To Make Copycat Crumbl Churro Cookies

Cookie

  1. Preheat your oven to 350°, and line a baking sheet with parchment paper. Set aside.
  2. Cream together butter, brown sugar, granulated sugar until light and fluffy. Add in eggs and vanilla, and mix well.
  3. Add in corn starch, baking powder, baking soda, salt, cinnamon, and mix well.
  4. Slowly mix in flour until well blended.
  5. Using a 1½ cookie scooper, scoop dough into cinnamon and sugar mixture and roll it until the dough is completely covered. Place them on the lined cookie sheet evenly spaced apart. Bake for 8-10 mins. until the cookie is slightly golden around the edge.
  6. Let the cookies cool for a couple of mins and place them on a cooling rack.

Cinnamon Frosting

  1. Mix together butter, and vanilla until light and fluffy. Add in cinnamon, and brown sugar until well combined. Slowly add in powder sugar until mixed well.
  2. Once the cookies are completely cooled, frost them using a piping bag and a Wilton 35 tip, or you can cut the tip off a ziplock bag and frost the cookies.
  3. Sprinkle leftover cinnamon and sugar on top of the frosted cookie. Enjoy!

Ingredients

Cookie Dough

  • 1 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 2 tbsp corn starch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • tsp cinnamon
  • ½ tsp salt
  • cup all-purpose flour

Cinnamon and Sugar Coating

  • ½ cup granulated sugar
  • 1 tsp cinnamon

Cinnamon Frosting

  • 1 cup unsalted butter (softened)
  • 3 tsp vanilla
  • 2 tsp cinnamon
  • 1/3 cup brown sugar
  • 3 1/4 cups powder sugar

Instructions

  • Preheat your oven to 350°, and line a baking sheet with parchment paper. Set aside.

  • Cream together butter, brown sugar, and granulated sugar until light and fluffy. Add in eggs and vanilla, mix well.

  • Add corn starch, baking powder, baking soda, salt, and cinnamon, and mix well.

  • Slowly mix in flour until well blended.

  • Scoop dough using a 1/3 cup and roll into a ball. Roll dough into cinnamon and sugar mixture until dough is completely covered. Place cookies on the lined cookie sheet evenly spaced apart. Bake for 8-10 mins. until the cookie is slightly golden around the edge.

  • Bake in a preheated oven for 12-14 minutes or until edges are golden brown and tops are no longer glossy.

  • Remove from the oven and let them cool for a couple of mins before placing them on a cooling rack.

Cinnamon Frosting

  • Using a hand mixer beat butter and vanilla until light and fluffy. Add in cinnamon, and brown sugar until well combined. Slowly add in powder sugar until mixed well.

  • Once the cookies are completely cooled, frost and sprinkle with leftover cinnamon and sugar mixture. Enjoy!

    Wanting to try recipe, but I dont have a cookie scoop. I see your recipe says a 1 1/2 scoop. How much dough is that?

      You could use 1/3 of a cup to scoop out the dough. They will be large like Crumble. If you want smaller cookies, you can scoop out 2 Tbsps, and adjust the baking time.
